A little about this dish

Tender cornstarch sandwich cookies filled with dulce de leche and edged with coconut. Use thick dulce de leche, sometimes labeled repostero or pastry style. A runny sauce will squeeze out of the sandwich.

Cooking tips

Keep the cookies pale. Browning them deeply makes them crisp rather than tender. Measure flour and cornstarch gently instead of packing the cups.

Storage & reheating

Store assembled cookies airtight in the refrigerator for up to 5 days, following any shorter storage direction on your dulce de leche. Let stand briefly before serving. Freeze unfilled cookies for up to 2 months.

Variations

Leave the coconut off if you prefer. Use a little orange zest in place of lemon for a different aroma.
