How to Measure Flour Without Packing It
A simple spoon-and-level method for more consistent cups of flour.
Start with a dry measuring cup
Use a cup with a flat rim that lets you sweep off the excess. A liquid measuring jug is harder to level accurately for flour.
Loosen, spoon, and level
Stir the flour in its container to loosen it. Spoon it into the cup until slightly heaped, without tapping the cup on the counter. Draw the straight edge of a knife across the rim once to remove the excess.
Scooping the cup straight into the bag compresses flour. That extra flour can turn a soft cookie firm or a tender loaf dry.
Follow the recipe’s method
If a recipe gives a weight, use that weight with a kitchen scale. Cup-to-gram conversions vary with flour type and measuring technique, so avoid treating one conversion as universal.
For the banana bread, measure the flour before mixing the wet ingredients. Stop folding the batter when the dry streaks disappear.
