Ingredients
- 12 oz fully cooked smoked sausage, cut into 1/2-inch slices
- 1 lb baby potatoes, cut into 1/2-inch pieces
- 2 bell peppers, cut into 1-inch pieces
- 1 medium zucchini, cut into thick half-moons
- 1 small red onion, cut into wedges
- 2 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Heat the oven to 425°F. On a large rimmed sheet pan, toss potatoes with 1 tablespoon oil and half the salt. Roast for 10 minutes.
- Toss sausage, peppers, zucchini, and onion with the remaining oil, remaining salt, paprika, garlic powder, and pepper.
- Add the mixture to the potatoes and spread into one layer. Use a second pan if crowded. Roast for 20–25 minutes more, stirring halfway through.
- Check that potatoes are tender when pierced and the fully cooked sausage is hot throughout; follow any heating instructions on its package. Serve straight from the pan.

Refrigerate within 2 hours for 3–4 days. Reheat on a sheet pan or in a skillet until leftovers reach 165°F.
Variations
Replace zucchini with broccoli florets, adding them with the peppers. Choose chicken or pork smoked sausage as long as it is fully cooked.
