A little about this dish

Individual baked eggs with spinach, bell pepper, and cheddar for an easy make-ahead breakfast. They puff as steam expands in the oven, then settle as they cool. This is normal; avoid overbaking in an attempt to keep them tall.

Cooking tips

Grease the pan thoroughly, including the upper edges of each well. Paper liners often stick to eggs, so silicone cups can be easier if your pan tends to stick.

Storage & reheating

Refrigerate within 2 hours for 3–4 days. Reheat to 165°F. Freeze cooled muffins individually for up to 2 months and thaw in the refrigerator.

Variations

Use finely chopped cooked broccoli instead of spinach, or swap cheddar for Monterey Jack.
